Peach Caprese with Balsamic Cherries

It’s hard to beat a classic Caprese of tomatoes, mozzarella, and basil, but I really love this version. Peaches are so sweet right now and make such a good match to the creamy mozzarella... add in the tang of cherries tossed in balsamic, a drizzle of olive oil, a little flakey sea salt... 😋 😋

Do yourself a favor and serve it with some crusty bread and an ice-cold glass of crisp white wine (and have an extra glass for me!).

Peach Caprese with Balsamic Cherries

Ingredients

  • 1/4 cup Balsamic vinegar
  • 3/4 cup quartered cherries (pits removed)
  • 2 peaches, sliced
  • 1 ball mozzarella, sliced
  • Salt and pepper
  • Extra virgin olive oil
  • Basil

Cooking Directions

  1. Simmer the balsamic in a small saucepan until it reduces in half. Toss with cherries and season with salt and pepper.
  2. On a serving plate, arrange peaches and mozzarella. Season with salt. Top with cherries. Drizzle with olive oil. Garnish with torn basil leaves.
