Peach Caprese with Balsamic Cherries
It’s hard to beat a classic Caprese of tomatoes, mozzarella, and basil, but I really love this version. Peaches are so sweet right now and make such a good match to the creamy mozzarella... add in the tang of cherries tossed in balsamic, a drizzle of olive oil, a little flakey sea salt... 😋 😋
Do yourself a favor and serve it with some crusty bread and an ice-cold glass of crisp white wine (and have an extra glass for me!).
Peach Caprese with Balsamic Cherries

Ingredients
- 1/4 cup Balsamic vinegar
- 3/4 cup quartered cherries (pits removed)
- 2 peaches, sliced
- 1 ball mozzarella, sliced
- Salt and pepper
- Extra virgin olive oil
- Basil
Cooking Directions
- Simmer the balsamic in a small saucepan until it reduces in half. Toss with cherries and season with salt and pepper.
- On a serving plate, arrange peaches and mozzarella. Season with salt. Top with cherries. Drizzle with olive oil. Garnish with torn basil leaves.
