Chili Roasted Eggplant
I used baby eggplant for this, but you could totally just cut a larger eggplant into cubes πΆοΈπ
Chili Roasted Eggplant
Easy 6 Servings 35 MinutesIngredients
- 1 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- freshly ground black pepper
- 1-2 tablespoons extra virgin olive oil
Instructions
- Preheat oven to 400 and line a baking sheet with parchment. In a mixing bowl, whisk ingredients with extra virgin olive oil.
- Toss with eggplant to coat. Bake until fork tender and golden brown, about 15-20 minutes.
- Serve with a squeeze of fresh lime and a sprinkle of flakey sea salt. Yum!!
