Rich Chocolate Pudding and Amaretto Whipped Cream Parfaits
Assemble these parfaits well before dinner and refrigerate until time to serve. Individual desserts like these make your dining companion feel special. The chocolate is so rich and the hint of amaretto in the whipped cream will really set the mood!

Ingredients
For the Pudding :
- 1/2 cup sugar
- 1/4 cup all-purpose flour
- 1/2 cup high-quality dark cocoa powder
- 1/4 teaspoon kosher salt
- 2 cups whole milk
- 2 large egg yolks, lightly beaten
- 1 teaspoon vanilla extract
For the Whipped Cream :
- 1 cup heavy cream
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon amaretto
- 6 chocolate wafer cookies, crushed
Cooking Directions
- For the Pudding: In a medium saucepan over medium heat, combine the sugar, flour, cocoa, and salt. Mix well. Whisk in the milk. Stir constantly with a wooden spoon while the mixture comes to a low boil and becomes thick, 5 to 7 minutes. Reduce the heat to very low. Stir a couple of tablespoons of the hot mixture into the egg yolks. Stir the egg yolks back into the hot milk mixture. Stir constantly until thickened, 3 to 4 minutes. Remove from the heat and stir in the vanilla. Cover with plastic wrap to prevent skin from forming and let cool completely.
- For the Whipped Cream: Using an electric mixer on high speed, beat the cream, sugar, vanilla, and amaretto until stiff peaks form.
- To Assemble the Parfaits: Place one-quarter of the pudding in each parfait glass and top each with one-quarter of the whipped cream. Sprinkle each with one-quarter of the crushed cookies. Repeat layers. Refrigerate, covered, until serving time.
